Before we go any further about what your options are for kitchen seasonings, let me just say this: any time you use a seasoning mix or spice blend, you will get much better flavor from the spices if you toast them first in a dry skillet before adding them to your dish. So don’t skip this step!

Mexican – Chili powder (not cumin),

Cajun seasoning: 2 tablespoons salt, 2 tablespoons black pepper, 1 tablespoon paprika, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1 teaspoon cayenne pepper, 1 teaspoon red pepper flakes. Mix together thoroughly and store in airtight container. For best flavor use within 6 months. Makes about a cup.

Taco seasoning: 3 tablespoons chili powder, 2 tablespoons cumin, 2 teaspoons garlic powder, 2 teaspoons onion powder, 2 teaspoons crushed red pepper flakes, 1 teaspoon dried oregano leaves and ½ teaspoon ground coriander. Mix together thoroughly and store in airtight container. For best flavor use within 6 months. Makes about a cup.

Red Cajun spice mix: 4 tablespoons paprika, 3 tablespoons garlic powder, 3 tablespoons onion powder and 2 tablespoons dried thyme leaves. Mix together thoroughly and store in airtight container. For best flavor use within 6 months. Makes about a cup.
