My father is from Mexico, and he taught me how to make this dish when I was about 10 years old. My family loves it so much that we have it quite a bit.

Makes: 4 servings
2 dried guajillo chiles, stemmed, seeded, and torn into flat pieces
1/2 cup coarsely chopped onion
3 garlic cloves, chopped
1 tablespoon vegetable oil
1/2 teaspoon dried oregano, preferably Mexican
1/4 teaspoon ground cumin
1 (14.5-ounce) can diced tomatoes in juice (about 1 3/4 cups)
3/4 cup low-sodium chicken broth or water**
1 bay leaf**
2 tablespoons tomato paste* *If you have time, roast the chiles over a gas flame or in a dry skillet until fragrant and beginning to soften (flipping them with tongs), about 30 seconds. You can also skip this step and go straight to rehydrating them.**If using water, add a little salt to taste.DirectionsPlace chiles in medium bowl. Cover with boiling water; press chiles into water with spoon. Let stand until softened, about 20 minutes. Drain chiles; transfer to blender.
