1 1/2 cups of chopped tomatoes, cored and peeled (about 3 medium tomatoes)

3 tablespoons of finely chopped white onion

2 cloves of garlic, minced

1/4 cup chopped fresh cilantro leaves (coriander)

1 jalapeno pepper, stemmed, seeded and finely chopped

1/8 teaspoon salt (or to taste)

Instructions:

Combine all the ingredients in a bowl. Stir to blend well. Chill for at least two hours before serving. Serve with your favorite Mexican dishes. You can also use this as a dip for tortilla chips.”
