The popularity of fajitas is growing so rapidly that it can be difficult to find the real story behind their history. The most common stories, while they have some truth to them, are often incomplete or misleading:

The word fajita comes from the Spanish word “faja” which means “belt.” The original definition of the word was simply a rolled skirt steak. As time went on, the meaning of the word broadened to mean any grilled meat served with cooked onions and peppers.
