OPINION: No matter where you buy your spices, the chances are that they will not be fresh. They may have been harvested a long time ago and kept for months or even years before making it to your kitchen.

The chief enemy of fresh spices is moisture. Even if you place them in an airtight container as soon as they reach you, they will still go stale within a few weeks if they are exposed to too much moisture.
