Thai curries are easy to make and use many of the same spices you will find in other dishes from Thailand. The most important ingredient for any curry dish is the curry paste. We use different pastes for different foods but it is always made up of the same basic ingredients: chilies, shallots, garlic and lemongrass.

Among the most highly regarded and sought after curries of the world, Thai curry is a dish that is enjoyed by millions. It’s savory and spicy flavors are able to be enjoyed as an entree or a side dish. There are many different varieties of Thai curry, but they all contain the same core ingredients which include chili peppers, garlic and ginger.

Red Curry:

Green Curry contains all of the same ingredients as Red Curry with one exception…green chillies! These spicy green chillies give Green Curry a hotter kick than Red Curry making it perfect

Chicken Curry

This is a classic, tasty dish that is easy to make. Just follow these simple steps:

1. Cut chicken into bite-size pieces and set aside.

2. In a hot wok or skillet, add oil and heat. Add onion, garlic, ginger and stir-fry for about 2 minutes until onion is translucent. Stir in chicken and cook until no longer pink on the outside.

3. Next add curry powder or paste, coconut milk, fish sauce or soy sauce, sugar, salt and pepper if desired. Stir well to combine all ingredients together. Bring to a boil then reduce heat to simmer for 5 minutes or until flavors blend together nicely.

4. Serve over rice or noodles!

When you order a meal, it is common to ask the waiter how spicy you would like your dish prepared. The default level of spice is usually “medium,” so if you want your food to be prepared with more (or less) spice, make sure that you specify this when ordering.

If you are concerned about the spiciness of your dish but still want it to have a bit of flavor, try ordering it ‘pet nit noy,’ which means “a little bit spicy.”
