Saffron, saffron, saffron… if you love to cook then it is likely that you have used this wonderful spice in a dish or two. However, if you are not familiar with it then read on because this article will tell you all about it, where it comes from and why it is so expensive.
It is the most expensive spice in the world because of the amount of work that goes into harvesting it. It comes from the stigma on a flower called crocus sativus which grows only in certain regions of the world and is hand picked after being harvested. The stigma is what makes up the threads of saffron and each flower only produces 3 of them.

Saffron Infused Olive oil
Saffron is a great match for other flavors in oil – garlic, rosemary, lemon, and chili. Try infusing some olive oil with saffron threads by heating about 1/4 cup olive oil over low heat for about 5 minutes. Be careful not to burn the oil. Add about 12 threads of saffron to the hot oil and remove from heat. Let sit for 20 minutes before straining off the saffron. The resulting oil is great on pasta, fish or chicken.
Use Saffron with Chicken Stock
You can add Saffron threads to any recipe that calls for chicken stock to add a nice subtle flavor and color change without changing the taste profile of your dish too much (so you could still have an Italian chicken dish with Saffron infused stock if you wanted).
