I asked my colleague J. Kenji Lopez-Alt what he thought. He’s our resident spice expert. He said his usual rule of thumb was to use up spices within six months to a year of purchasing them; once ground, their flavor deteriorates more quickly. But he said that with whole spices, like star anise, you can preserve their flavor by drying them . . . .
