If you want to drink your tea spicy and hot, make a chai masala and heat it up in the microwave. Chai masala is a spice mix. You can buy it at any Indian grocery store, but it’s so easy to make at home that it’s silly to buy it.

A typical chai masala contains ginger, cardamom, cinnamon, cloves, and black pepper. It also usually contains anise and licorice root, but if you don’t have those and don’t want to get them you can leave them out. The recipe that follows has four spices; this is enough for me but some of my Indian friends say they like their tea even spicier.

Ingredients:

– 4 tablespoons black peppercorns (or less if you’re not into spicy tea)

– 1 tablespoon green cardamom pods (usually sold in small plastic bags)

– 1 cinnamon stick

– 2 teaspoons whole cloves or 2 tablespoons ground cloves

Preparation:

1. Crush the peppercorns with a mortar and pestle or the back of a big spoon. You can also use a coffee grinder or a blender if you have one. You should end up with about half a cup of crushed peppercorns

When the Chai Masala is ready, you can add a few drops of thick cream and some cinnamon powder and serve.

CHAI MASALA RECIPE

Ingredients:

1 teaspoon of whole cloves

8 black peppercorns

2 sticks cinnamon

2 teaspoons cardamom seeds (seeds of green cardamom pods)

1 tablespoon ginger, grated or finely chopped

3 cups water

5 cups milk**

Thick cream or ice cream to serve (optional)

Method:

1. Place the spices in a piece of muslin cloth and tie it up with a string. Put the bag in a saucepan with the water and bring to a boil. Reduce heat, cover and let simmer for 10 minutes. Remove the spice bag. Add milk and bring to a boil again then reduce heat to low and simmer for about 10 minutes. The longer you simmer, the stronger the taste will be. If you want your chai masala more spicy then increase the amount of spices you add as per your taste. You can also add honey or sugar if you prefer sweet chai masala.

2.Remove from heat and serve with thick cream or ice cream, if desired.”

9) Water for boiling tea leaves and spices (with sugar added to it).
