We add sliced okra, yellow squash, onions, and garlic to our pot of chicken stock to make our first batch of gumbo. After the vegetables are cooked enough we add the green peppers, celery, and tomatoes then season with salt, pepper, and red pepper flakes. We let the gumbo simmer for about an hour or two before adding shrimp and crabmeat. Next is our file which includes onions, bell peppers, garlic, parsley, filé powder (made from sassafras leaves), thyme, oregano, cumin and black pepper. And finally we stir in some rice to thicken our gumbo before we take it off the stove.
The entire process of making gumbo can take up to eight hours from start to finish. We make a new batch every Monday and Thursday so that we always have gumbo ready to serve at lunch on Tuesday and Friday.
