Inspired by the yummy Pav Bhaji I had at a local restaurant, I decided to try to make it at home. Sounds simple, right? Well, maybe if you’re already an expert with Indian spices. For me, the attempt was definitely worth it. (I’d also like to note that the restaurant version was not vegetarian. So here is my vegan version.)

The ingredients I used are as follows:

1) 1 medium-sized potato (about 1/2 cup or so) 2) 1/3 cup frozen green peas 3) 1 teaspoon cumin seeds 4) 1 teaspoon coriander seeds 5) 1 teaspoon red chile powder 6) 1 teaspoon turmeric 7) 2 teaspoons Pav Bhaji Masala 8) 2 tablespoons vegetable oil 9) salt and pepper to taste 10) water

While the potatoes are cooking, I toast the cumin seeds and coriander seeds in a dry pan over medium heat until they start to pop. Be careful not to burn them!

I then add the chile powder and turmeric and mix until the cumin seeds have browned slightly. Then add:
