3 tablespoons olive oil, divided3 cups chopped onion2 garlic cloves, minced1/2 cup red wine1 (28-ounce) can whole peeled tomatoes, drained and diced3 tablespoons sweet paprika2 teaspoons sugar1 teaspoon salt1/4 teaspoon red pepper flakes1 bay leaf1 pound sweet Italian turkey sausage links, casings removedGround black pepper to tasteFresh parsley or basil leaves for garnishDirections:In a large frying pan over medium heat, warm 1 tablespoon olive oil. Add onion and garlic; cook for about 5 minutes until the onions are translucent. Add wine and simmer for 2 minutes. Stir in tomatoes, paprika, sugar, salt, red pepper flakes and bayleaf. Simmer uncovered for 30 minutes. Meanwhile, in a medium skillet over medium-high heat, warm remaining 2 tablespoons of oil. Add sausage;cook until browned on all sides. Break up the chunks into smaller pieces with a wooden spoon. Season with salt and pepper. Drain excess fat from the skillet if necessary. Remove sausage from the skillet and slice into bite-sized pieces. Stir the sausage into the sauce mixture. Serve over your favorite pasta along with your favorite fresh herbs such as parsley or basil

Sweet Paprika Ingredients:

1/4 cup olive oil

1/4 cup butter

1 large onion, chopped

3 cloves garlic, finely chopped

1 red bell pepper, chopped into small pieces

2 celery sticks, chopped into small pieces

6 ounces ground beef (optional)

1 1/2 cups water or tomato juice (if you add the beef)

28 ounce can of crushed tomatoes or tomato sauce (if you add the beef)

You can find it at your local grocery store in the spice aisle. It is also called Pimenton de la Vera (Spanish), Mirapricot or Kalustyan’s Sweet-Hot Paprika (Indian).
