Simmer uncovered for 30 minutes. Meanwhile, in a medium skillet over medium-high heat, warm remaining 2 tablespoons of oil. Add sausage;cook until browned on all sides. Break up the chunks into smaller pieces with a wooden spoon. Season with salt and pepper. Drain excess fat from the skillet if necessary. Remove sausage from the skillet and slice into bite-sized pieces. Stir the sausage into the sauce mixture. Serve over your favorite pasta along with your favorite fresh herbs such as parsley or basil
