From commenter “H.L.” comes this report from Hisar, India: The price of saffron has been increased and it is being sold at Rs.14000 to 15000 and some times 20,000 also (approx $300 per kg).

The situation is same in other cities also.

Is there any way we can do something about the price increase? In last 2-3 years the prices have been increased by 50% or more. This year again there is huge increase and all customers are very much upset about this.

Saffron is the most expensive spice in the world. It has been used for medicinal and culinary purposes since antiquity. Its high cost is mainly due to the fact that it takes roughly 70,000 handpicked stigmas of the saffron crocus to make one pound of saffron spice, and it is this labor-intensive harvesting that allows Kashmiri saffron growers to maintain a dominant position in the saffron market.

Saffron requires a somewhat special growing environment, so production is limited to a few countries. The majority of the world’s saffron actually originated from Kashmir region in northern India, whose traditional cultivators have for centuries gathered and painstakingly harvested their crops by hand.

But today, due to the higher cost of cultivation and harvesting, some farmers are choosing instead to cultivate and process cheaper crops like strawberries or tomatoes. This has led to a steady decline in prices over recent years.

The price of Saffron varies depending on grade, but generally ranges from US $700 per pound for Sargol grade (the best available) down to as low as US $20 per pound for lower quality saffron strands.

The cultivation and harvesting of saffron is difficult than any other spices. Saffron is mainly cultivated on small area. It takes around 150,000 handpicked flowers to obtain one kilogram of dry saffron stigmas. The harvesting procedure is very hard as it needs around 75 hours to harvest a single kilogram of saffron. A small break or mistake during the harvesting can spoil the whole lot.

In order to make a gram of pure saffron, it requires 50,000-75,000 flowers. It has been estimated that every year 150 tons of flowers are being collected just for producing 2 tons of dry stigmas which are being used for extraction of pure saffron color.
