I spent a lot of my adolescent years in the kitchen, and I developed a strong passion for cooking. The one thing that I always hated about cooking was how dull the knives were. When I would try to cut up an onion or a tomato, it seemed like it took forever because the knives were so dull!

By the end of high school, my friends and family were always asking me what kind of knife they should buy. Because I had used so many different types of knives, and because I had dealt with so many dull ones, it was easy for me to recommend certain brands over others.

When I was about 12, I decided that for my bar mitzvah present I wanted a good kitchen knife. I talked to my mom and she found a local knifemaker named Jay Fisher. He made himself available for a tour of his workshop, and he impressed me with his passion for the craft.

My parents ended up buying me one of Jay’s knives for my bar mitzvah, and it’s still one of my most prized possessions. It’s an 8-inch chef’s knife made out of white steel, and it has some sort of super-hard black coating on the blade. The handle is made from a piece of wood that Jay cut out of the heartwood of a cherry tree that had been struck by lightning.

I used the knife to cook all through high school, but in college I wasn’t cooking much, so I guess it was sitting in a drawer unused for 6 or 7 years. When I moved to SF in 2010, though, I started cooking again, and now it’s probably my most-used possession besides my laptop.

Last year someone broke into my apartment and stole everything of value I owned: laptop, phone, camera—everything but the knife. So now I’m even more attached to it than before

It has a comfortable grip, was the easiest to sharpen and had some of the sharpest blades we tested. The Calphalon Classic Self-Sharpening 15-Piece Cutlery Knife Block Set came in second; it had great sharpeners in the block and was also very comfortable to use.
