What is chili powder?

To make your own chili powder, roast dried chiles on a skillet over medium heat until they are fragrant and starting to darken in color. Cool the roasted chiles and then grind them into a fine powder in a spice grinder or with a mortar and pestle. Add any additional spices you want to include in your chili powder blend. Store homemade chili powder in an airtight container for up to six months.
