I am always asked this question, “What is the secret to your cooking?” Well, the answer is simple: it’s love. But I know that’s not what you want to hear! You want to know which spice mix I use. Or what kind of oil. Or if there are any specialty ingredients I add to my food.

Well, I’m sorry to disappoint you, but there is no secret ingredient or magic formula. It’s all about balancing flavors—as long as you have that down, you’re golden.

Chickpeas, tomatoes, garlic and ginger are some of the most popular ingredients in Indian cuisine. There’s another ingredient that I’ve been using for years and still can’t get enough of. It’s not a spice or exotic vegetable, but it does make my food taste amazing.

What is this secret ingredient? Oil. Yes, oil. A few tablespoons of oil in any dish can really make a difference as far as taste is concerned. It adds flavor to your dish and also acts as a base for cooking your veggies and meat. I usually use palm oil in my curries because it has a good frying temperature (it doesn’t burn easily) and it adds a fresh orange hue to any curry sauce (which makes it look amazingly appetizing).

Most people don’t use enough oil when they’re cooking Indian food, which results in dry curry or curry with very little flavor. Adding a small amount of oil to your curry will not only help it taste better but will also prevent the spices from sticking to the pan and burning.
